Vanilla Roasted Walnuts

I don’t do well without a little dessert in my life. Without refined sugars and heavy pastries, dessert has become all the more enjoyable for me! I recently found a delicious (and incredibly easy) recipefor these Vanilla Roasted Walnuts at Elana’s Pantry; and it made me very happy that I buy my walnuts in bulk from Costco.
In addition to being delicious, and versatile, walnuts are packed with nutritional value. They are an excellent source of Omega-3′s, Vitamin E, even calcium and antioxidants!
Vanilla Roasted Walnuts
- 2 cups walnuts, raw
- 1 tablespoon olive oil
- 2 tablespoons agave nectar
¼ teaspoon celtic sea salt
- 1-2 vanilla beans
(or 1 t. vanilla extract)
- dash cinnamon, ground
As soon as you hear the slightest sizzle, turn heat down to medium or low.
Toast walnuts a few minutes until they smell nice and nutty, add agave and distribute around pan stirring, cook for a minute or two, then add salt.
Scrape the beans out of the vanilla pod and stir into walnuts (or pour in extract). Remove walnuts from pan and add just a dash of cinnamon if you like; Serve!
I had mine over some vanilla bean coconut ice cream with fresh picked blueberries and peaches…heavenly. Try a few on your morning cereal, or throw some in a bag for a mid-morning snack. These babies will give you the energy boost you need to keep your morning moving!
